- 5 pounds of Ground Chuck (preferably 70% fat content)
- 1 cup of Soy Sauce
- 5 tablespoons Sambal Spicy Chili Sauce
- 1/4 cup of Salt
- 3 Red Onions (sliced super thin)
- 1 cup Red Wine Vinegar
- 1 cup Sugar
- 2 cups Water
- 2 Egg Yolks
- 4 cups Canola Oil
- 2 Cloves of finely minced garlic
- 1 tablespoon of Dijon Mustard
- 1 cup of finely grated Parmesan Cheese
- 3 finely minced Anchovys (if you dare!)
- Fixings (per Burger)...
- 1/2 avocado, seasoned with Kosher Salt
- 3 slices of Cooked Bacon
- 1 slice of White Cheddar
- 2 leaves of Romain Lettuce
- 1 slice of Tomato (Heirloom is in season)
- 1 Sesame Bun, Toasted
OK! Lets do this! Mix the ground chuck, soy sauce, chili sauce & 1/4 cup of salt together to make 15 (6 oz.) burger patties. Set the patties to the side.
Combine the 2 cups of water, 1 cup sugar and 1 cup of red wine vinegar and bring to a boil. Pour the hot mixture over the sliced onions and cover with plastic wrap. Keep at room temperature and set aside until ready to use.
First things first...mince the garlic and anchovies and grate your cheese. Combine the egg yolks and mustard together in a large mixing bowl. Slowly being to add some canola oil to the mix, using a whisk to constantly stir the mix as the oil is added. After a cup of oil has been added the mix should begin to look like yellow mayonnaise. Continue to add oil while whisking the mix. If need be you can add a few drops of water as you go to help stabilize the emulsion. Once all of the oil has been added you should have a mayonnaise-like consistency. Add the remaining ingredients (garlic, parmesan cheese & anchovies) to the mix and season with a little salt and or lemon juice (optional).
Grill & Assemble
Grill the burger patties to the desired temperature (medium rare - medium). Don't forget to add cheese about 2 -3 minutes before your burger is done! Just before the burgers are finished toss the buns on the grill to toast them lightly. Slather your caesar aioli on your bun, and place the patties in the bun. Top with bacon, lettuce, tomato, avocado and your pickled onions and it's time to eat! Enjoy outdoors with an ice-cold beer, ambsn trunks and a bunch of chicks!
